FOOD SAFETY SELF-CONTROL PLAN (PGH, APPCC AND HEALTH REGISTRATION)

The catering and agri-food industry companies of Andalusia, in compliance with Directive 854/2004, must have a System of Self-Control or Self-Management of Food Safety that guarantees the safety of food during its processing, storage or distribution process and ensure its compliance. Gimasur will advise for self-management and correct implementation of the following protocols established in the Hygiene and Self-Control Plans.

  1. Water Control Plan suitable for human consumption: The correct completion of the registers will be checked and a check of the physical-chemical and organoleptic characteristics of the water will be carried out on site using the DPD method. The availability of hot water on site will also be checked.
  2. Cleaning and Disinfection Plan: The correct completion of the records will be checked as well as the correct cleaning status of facilities, tools and equipment, as well as the use of cleaning products with RGSA.
  3. Pest Control Plan: The correct adoption and maintenance of pollution protection measures and to prevent the occurrence of pests will be verified. In case of occurrence, it will be established that the relevant documentation of the treatment carried out (diagnosis, certificate of treatment, authorization of biocidal treatment company, etc.)
  4. Maintenance Plan of Facilities, Equipment and Tools: It will proceed to check the adequacy of the premises as well as the correct state of maintenance of them.
  5. Temperature control plan: The correct condition of cold equipment will be checked on site, carrying out an on-site storage temperature check of both frozen and refrigerated products. In addition, the correct defrosting practices will be checked.
  6. Manipulator Training Plan: Correct staff handling practices, staff training, proper workwear and personal hygiene will be verified.
  7. Traceability Plan: The identification of a packaged product (labeling, conservation limit) and an unpackaged food (identification mark, storage point, transport conditions) will be carried out to determine its origin (supplier)
  8. Waste disposal plan: A check will be carried out on the proper disposal of waste.

  • NALYSIS OF HAZARDS AND CRITICAL CONTROL POINTS or APPCC

Critical Control Point Analysis is a preventive method that logically, objectively and systematically controls the processing of healthy and safe food for the consumer.

If a food is determined to be received, stored, processed or processed in accordance with the APPCC system, there is a high degree of safety regarding its hygienic-sanitary quality. The system is applicable to all links in the food chain, from reception, storage, processing, to final use in the Centre.

In assessing the importance of a hazard, account is given to the likelihood of it occurring (inverse to the degree of control) and the severity of its consequences, hazards may differ between negligible, minor, greater, or critical. Those hazards that are once assessed become greater and critical will be those that will subsequently be properly implemented and a monitoring plan.

  • GENERAL HEALTH REGISTER OF FOOD AND FOOD COMPANIES

Royal Decree 191/2011 of 18 February on the General Health Register of Food and Food Companies (BOE 8.3.2011) aims to protect public health and the interests of consumers, facilitating official control of companies. Thus, all entities/enterprises/establishments must apply for registration in the General Health Register of Food and Food Companies, communicating their activity/existence and the place where it is located to the competent authority being thus recorded in a national or regional census depending on its activity.
